To make a good dish, you need to start from a good base. The mirepoix is one of the most important basic preparations. Let’s see how to make it… you’ll need a medium carrot, half a onion and a stalk of celery.
Take a stalk of celery, wash it and remove the external leaves.
Using a peeler or a knife, remove the outermost stringy membrane.
Cut the stalk lengthwise into strips… and dice them.
Move on to the carrot, peel it with a peeler.
Cut it into fine strips… and dice them.
Now start with the onion, peel and cut it into halves.
Place it on a worktop and cut it first lengthwise, then across.
Now slice the onion.
Finally, put the vegetables in a frying pan with the oil and sauté on a low flame.
