Chicken and rice is one of my favorite cast iron dishes, and here we’re using a special cast iron pot to make this dish: the Lodge Cast Iron “Sportsman” deep fish fryer. This particular cast iron piece was acquired from Birmingham Stove & Range when BS&R went out of business in 1992. The design for the famous Sportsman cast iron grill, including the fish fryer, was passed to Lodge Cast Iron as part of BS&R’s debt settlement. Lodge Cast Iron produced the “Sportsman” deep fish fryer during the 1990s, and discontinued it in 2002. Here we see the Sportsman fish fryer in action, and I’m glad to use this opportunity to say a few words about the history of this famous and very attractive cast iron pan. The recipe for this dish can be seen on my Web site, Cast Iron Chaos, at: http://www.modemac.com/wiki/Dutch_Oven_Chicken_and_Rice
