Sourdough Pineapple Doughnuts how to Recipe Demo at Bakery
Makes about 6 Cake Donuts
Recipe Ingredients:
Strong white Flour 225g
Salt 7g
Sugar 28g
White Shortening 28g
Egg 28g
Milk 113g
Sourdough 45g
(If you want quicker dough add in 28g of fresh yeast or 14g dry yeast)

Method:
1. First you start with adding egg & the milk into a bowl check the temp (wants to be room temp)
2 Now into 2nd bowl add in flour & white shorting mix together light crumb
3 Now into the mixing bowl add in egg, milk, & now add in the sugar mix round
4. Now add in sourdough start & flour mix round
5. Now put on to mixer
6. Mix on 1st speed for 1 min add in salt
7. Now need the scrape down
9. Now mix for a further 9 min on 2nd speed (scraping down often)
10. Now ready put onto a bowl & cover
11. Now rest for around 6 hours or pop into fridge for the next day is best
12. Now roll out with rolling pin to about 1.5 thick, and for cutting out with a ring cutter size 7.5 cm or 3in and with the dough scrap make into doughnut
13. Now for tray up dust with semolina
14. Right then you now need to wait for about 2 – 3 for the doughnuts to prove up
15. Now ready for frying the ring donuts pop into oil & fry for 7 – 8 min each side at 170 c
16. Well done bakers now cool on a tray & dip into icing sugar
Now for the icing on the cake: Pineapple syrup 8 tbsp Icing sugar, 6 tbsp Pineapple juice mix. Mix together in a Microwave Bowl until clear now pop into the Microwave and heat up until just beginning to bubble and turn into a clear syrups, while the syrup is still hot brush the tops of the doughnut and then pop on some icing sugar

10 oz Organic Stone ground Shipton Mill
10 oz Water
2 tea spoons Yogurt Optional
Place the wholemeal flour & water, yogurt into a clean bowl mix together into a paste, cover & leave for 24 hours
Day 2
Place the 5oz & 5oz wholemeal flour water into a clean bowl with ½ the starter from day 1, mix together into a paste, cover & leave for 24 hours
Day 3
Place the 5oz wholemeal flour & 5 oz water into a clean bowl with ½ the starter from day 2, mix together into a paste, cover & leave for 24 hours
Day 4
Place the 5oz wholemeal flour & 5 oz water into a 1st clean bowl with ½ the starter from day 3, mix together into a paste, cover & leave for 24 hours
Place the 5oz White flour & 5 oz water into a 2nd clean bowl with ½ the starter from day 3, mix together into a paste, cover & leave for 24 hours
Day 5
Place the 2oz Wholemeal flour into the 1st clean bowl with the starter from day 4, mix together into a paste / dough, cover & put into Fridge, this starter is for wholemeal types of sourdough breads
Place the 5oz White flour into the 2nd clean bowl with the starter from day 4, mix together into a paste /dough, cover & put into the Fridge, this starter is for white types of sourdough breads
To fully activate the sourdough starter, remove starter from fridge around 12 – 15 hours before you want to use it, put a small bit into warm water, if it floats it ready, it may need longer if cold weather
