In this recipe I take up the challenge to demonstrate my take of this popular West African rice dish. I have tried to simplify the process for any first timer especially without some of the basic ingredients that are not available in my region. I have made a non spicy version especially if you don’t like the heat from chillis

Ingredients:
2 Large onions
2 medium red peppers(for spicy version add chillis)
3 tomatoes
1-2 tbsp tomato paste
Garlic (optional)
250ml water/chicken stock
Suya spice(you can substitute with 1 tsp of ginger, garlic,paprika,cumin each)
3 cups rice
